Brownies
Yield : 20 - 25 servings Total Time : 35 minutes
Ingredients
145 grams semi-sweet chocolate (¾ cup chocolate chips)
110 grams butter (one stick)
225 grams granulated sugar (1 ⅛ cups)
3 large eggs
½ teaspoon salt
1 teaspoon vanilla
1 ½ teaspoons instant coffee
98 grams all-purpose flour (¾ cup)
1 tablespoon all-purpose flour
195 grams chocolate chips (1 cup)
Method
Preheat oven to 350°F and line and grease a ¼ sheet pan.
Melt 145 grams of chocolate (¾ cup chocolate chips) and 110 grams butter (1 stick) in a medium saucepan. Once melted remove from heat.
Add 225 grams sugar (1 ⅛ cups) and mix until fully combined.
Incorporate the 3 eggs one at a time.
Add ½ teaspoon salt, 1 teaspoon vanilla, and 1 ½ teaspoons instant coffee and mix well before adding 98 grams all-purpose flour (¾ cup).
Toss 195 grams (1 cup) of chocolate chips with 1 tablespoon flour before adding to the batter. Thoroughly combine before pouring the batter into the prepared pan.
Bake at 350 for 14-17 minutes.
Notes
I like to line the sheet pan with tin foil and then butter and flour the tin foil to ensure that the brownies don’t stick.
If you want bigger chunks of chocolate allow the batter to cool for 15 minutes before you incorporate the chocolate chips.
