Brownies

Ingredients 

  • 145 grams semi-sweet chocolate  (¾ cup chocolate chips)

  • 110 grams butter (one stick)

  • 225 grams granulated sugar (1 ⅛ cups)

  • 3 large eggs

  • ½ teaspoon salt

  • 1 teaspoon vanilla

  • 1 ½ teaspoons instant coffee

  • 98 grams all-purpose flour (¾ cup)

  • 1 tablespoon all-purpose flour

  • 195 grams chocolate chips (1 cup)


Method

  1. Preheat oven to 350°F and line and grease a ¼ sheet pan.

  2. Melt 145 grams of chocolate (¾ cup chocolate chips) and 110 grams butter (1 stick) in a medium saucepan. Once melted remove from heat.

  3. Add 225 grams sugar (1 ⅛ cups) and mix until fully combined.

  4. Incorporate the 3 eggs one at a time.

  5. Add ½ teaspoon salt, 1 teaspoon vanilla, and 1 ½ teaspoons instant coffee and mix well before adding 98 grams all-purpose flour (¾ cup). 

  6. Toss 195 grams (1 cup) of chocolate chips with 1 tablespoon flour before adding to the batter. Thoroughly combine before pouring the batter into the prepared pan. 

  7. Bake at 350 for 14-17 minutes.


Notes

  • I like to line the sheet pan with tin foil and then butter and flour the tin foil to ensure that the brownies don’t stick.

  • If you want bigger chunks of chocolate allow the batter to cool for 15 minutes before you incorporate the chocolate chips.
